This Quinoa Salad is a perfect side for your next lunch.  The flavors are jam packed and are sure to impress your guests.  Luckily for you, this one-pot wonder is so simple!

Quinoa Salad, serves 4-6


1 12-oz can black beans

1 cup quinoa

1 tbsp Amino Acids

1/2 lime, juiced (equals 1 tbsp)

3 tbsp vinegar (Apple Cider or Sherry works just fine)

1 chipotle in adobo, minced (omit if you do not like the spice)

1/4 cup extra-virgin olive oil

6 scallions

1 small red onion, diced

1 bell pepper, diced

1/4 cup chopped cilantro

Salt and pepper to taste


1.  Bring 2 cups of water to a boil in a medium saucepan.  Stir in the quinoa.  Cover and reduce to simmer over low heat.  Cook for 15 minutes or until water is absorbed, stirring occasionally.  Take off heat and let cool.

2.  Meanwhile, in a large bowl, whisk the amino acids, lime juice, vinegar, and minced chipotle.  Stream in the olive oil and continue to whisk.

3.  Add the black beans, quinoa, scallions, red onion, bell pepper and cilantro and stir to combine.  Add salt and pepper to taste.

4.  Refridgerate until ready to serve.  Enjoy!
