I absolutely love a cookie, but I know that the ingredients are not the best for my body (cue the sugar and flour). This recipe keeps the sugar at a minimum while providing healthy fats that help regulate my blood sugar. The fact that it curbs my sweet tooth is fantastic…mind over matter!

Low Sugar Oatmeal Cookies

Ingredients

1/2 cup oat flour (oats ground up in a food processor or a blender)

1 cup oats

1/4 - 1/2 cup maple syrup or honey, depending on your preference

1 egg (sub a flax egg if you are avoiding eggs)

1/2 cup nut butter of your choice (I used Costco’s Mixed Nut butter, which they do not seem to have on the website yet so this Almond Butter will work excellent as well)

1/4 cup blueberries, or berry of your choice (I used frozen, but fresh or dried would also be fantastic)

1/2 tbsp cinnamon

Directions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Line a baking sheet with parchment paper.

  3. In a medium bowl, mix all ingredients until a dough is formed.*

  4. Roll dough into 1-1 1/2 inch balls and place on the lined baking sheet.

  5. Bake for 10 minutes, or until a light brown color on the bottom.

  6. Cool for 5 minutes, and enjoy!

*If dough is a bit dry, add more nut butter.
